One of the values shown the MAX display appears to be the Z-offset value. Can somebody tell me what this value means and why it is important enough to display along with temperatures?

I've found that sometimes you can benefit from having the nozzle a bit closer to the bed with PETG and further away with TPU or PLA, so for that reason I actually like having it as an option.

The reason it is displayed there is because, like the temps, it's adjustable mid-print.
@MarkH the bed-leveling knowns the shape of the bed but not precisely the distance between the nozzle and the bed itself, this is a free parameter that you should set. that's it.
There is a suggested procedure by creality, layer test models are also probably good to try.
