In creality print, can I stop models automatically dropping to the bed? Ie print at a level higher than zero?
Yes, if it is a part of another piece. The printer cannot print in air so it has to be part of another piece. One way to do this is to save a part as a .stl and then right click on the piece you want it to be a part of and choose add part, then load the .stl. Another way is to assemble the two pieces and then one of them can be moved higher than the other. But… you cannot make it so they are not connected. Again, the printer cannot print in air or a third layer above a first layer. There must always be something to print on. Those could be supports if needed. I assume there is a reason for it you not wanting to drop it to the print bed.
One more thing, since you didn’t explain the situation. If you do a cut and keep both pieces, they will both drop to the print bed, unless…. you click on the ‘cut to parts’ option
