Ender 3 v 3 knocking over prints

I have a Ender 3 v 3 Plus, the printer will print low profile designs, once I try to print a design that is 2" or taller it knocks over part of the print, extruder hits the print. I have ensured that the bed is level. I have ensured that the first layer is good. I did test blocks and noticed lines on the “Y” block. I have tried increasing the heat on the first layers, printing at slower speeds and adjusting the flow rate. Please help.
One note: I did print the Saturn Rocket that was tall and it turned out fine, thinking it was due to it being a thin cylinder.

Are you printing more than one thing at once and printing by object or by layer? I print by layer with multiple prints and have z hop of about 1mm

Printing one thing and printing by layer. My Son is the printer, he has printed many things just fine. It just started knocking over prints. We did get new bed sensors and mother board from the factory, it doesn’t seem to have helped. He had his Z Hop at .1 mm. Yours is at 1 mm? Do you think that is the issue? I really appreciate the help.

1mm is probably excessive, 0.4mm would be better. What infill is he using and retraction distance?

In addition to what @Bonfireman said… what are your temps and filament…?

What did you set the flow rate to…?

We did use the 1.0mm and it worked. He reduced it to .8mm and it was knocking it over again, in addition he changed the Tree slim support setting as well, not sure if that played a role in knocking over the design after the adjustments. He just moved the Zhop back to 1.0mm and Tree organic, which is what worked after your recommendations, it seems to be working once again. Cross hatch infill with .6mm retraction is what he has it set on.
