A new OTA update 1.2.1.13 has been released which improves bed leveling and I think will be useful to you. Be sure to re-level the bed after the upgrade!

I faced also an issue with my new Ender 3 V3. Not sure that’s the same of yours, but anyway, it will may be help you. After more or less 10 hours of usage without any problem, I faced a recurrent when I wanted printing something. Instead of going down to start the leveling, the printing head went up, step by step and stopped.
After investigations, the root cause was the fact that the leveling system was blocked by the bed stuck at the electronic card, managing the the leveling, under the bed.
