I have ruined 2 pei sheets as on both auto-leveling and even initial setup (after attempting to start fresh from reset) the nozzle is scraping against the pei sheet. I have tried to adjust z-offset, bed level, manually, automatically etc.
Has anyone else encountered this issue?

Check the hotend securing screws (under the silicon sock) these can come loose and effect bed calibration.
When you complete a bed calibration are there any large discrepancies left to right?
Yeah. The left is higher than the right side.

This will help to effectively level the bed and may stop the scraping.
