I noticed my bed mesh was uneven like crazy. I always do bed calibration before i print. also did the 24 point on the machine itself. How can i fix this?

Have you tried to preheat 5-10 minutes before doing the leveling ?
And looking at the first photo, I think you may need to play with leveling knob under the bed (Check first but I think there are installed by default on the V3 SE ? 
)
no knob under its a ke. i want to put spring in place of the spacers but not sure where to get them

It looks like you need to adjust the “Z” offset, the nozzle needs to be a bit lower. This can be done as you are printing the test 1st layer.
i already did the z offset as well. Im looking into spacers but not sure which ones are good

I would need a better view of the bed mesh map. I don’t see where X start and where Y start
