After a failed print that resulted in the filament blob of death, I had to replace my extruder. Now my printer does not print correctly. I already leveled my printer and made sure the filament extrudes correctly. My issue is that when I start printing, some filament comes out, but not enough to reach the plate and make it stick. The nozzle is not clogged and it extrudes fine on command. Not sure what the problem is. Please help.

If you have re-leveled the printer then you will need to adjust the Z offset.
This is best done by printing a single layer test, and adjusting as it prints until you get good coverage and adhesion.

@Kevin_Smith1 is absolutely correct in this regard. You will have to readjust Z-Offset in this case. Here is a video that you may find helpful:
