The graph of the leveling of the platter shows a slope on the X-axis. I know that it is calibrated with CR-touch, but I would like to understand if it is possible to adjust it manually, since it is a small manufacturing defect.

I’ve found tutorials that show how to level the X-axis (YouTube). But apparently it’s correct, tried it with the gauge as well, and it looks right. Is there a way to fix the bed screws?

The video you posted a link to refers to the SE not the KE so you may find some of the procedures differ.

As a general rule the printer is quite happy to deal with variations of up to 3mm across the bed so you should not have any issues with the variance your graph shows.
